Congratulate me: yesterday I wore an actual pair of pants with a belt on them… for the first time in three months. I was also rudely awakened by the reality of having to shine my dress shoes – boy, were those guys dusty. All in all, it looks like the days of me complaining about all this quarantine madness are slowly coming to an end. In a way, it feels like spring has come back: you can see some cautious activity on the streets, businesses are slowly opening up, and it feels like, little by little, life is starting to get back to normal. I try to ignore my mind’s snarky remarks on ‘spring’ coming in the second week of June – it’s always been a nag.
To sum it up, for me personally, the last three months were not that bad. Of course, I understand how fortunate I am to be able to just work from home with minimum changes to my schedule and that not many people were blessed with a job that’s this flexible. However, I think we were all given the chance to slow down and look at our lives from a different perspective. I hear many people talk about making changes and reevaluating their priorities, after being faced with the evidence of how unsustainable their normal routine was. And many had a chance to just reset, which, in normal circumstances, they would have never dreamt of. I understand that it’s kind of hard to look at a global pandemic optimistically, but, you know… silver linings?
So, as I’m enjoying one of my last chill mornings, I decided to share with you my newest gastronomic discovery. On one hand, it’s something that you can (technically) enjoy on the go. On the other, it’s much better when enjoyed in the tranquility and comfort of your favorite eating spot. Okay, I think that’s enough with the suspense: the dish we’ll be making today is Keto Acai Smoothie Bowl.
It’s seriously mind-boggling to me how more Keto blogs aren’t writing about acai! Never had I ever assumed that it was so Keto friendly – a 3.5 oz package of frozen puree has only 4 grams of carbs, 3 of which are fiber! This means that one serving only has 1 gram net carbs. With stats like that, it’s crazy people aren’t shouting about it from the rooftops. Although, there might be a reason for that…
You see, apparently acai is normally found in the Amazon (the forest, not the website). And since these berries aren’t as ‘mainstream’ as, for example, blueberries, their availability is quite limited. They are also pricier than said blueberries, so, unless you’re planning on traveling to South America anytime soon, I suggest you order yours directly from Amazon – the website, not the forest. But all in all, if you feel like trying something new or simply treating yourself with a posh smoothie bowl – I can’t recommend this stuff enough. Acai is rich in fiber and antioxidants and is frequently referred to as a ‘superfood’. All of this to me definitely makes it worth trying to incorporate into your diet. Again, you don’t have to have it everyday, but it’s sure to make your special occasions even more special. And this Keto Acai Bowl is definitely one of the most magical breakfasts that I have ever had.
Keto Acai Bowl
- 2 packs frozen acai puree 3.5 oz each
- 2 oz frozen strawberries or other berries of choice
- 2 tbsp yoghurt optional, for creaminess
- 3 oz almond milk
- powdered sweetener to taste
- 1 scoop protein powder optiona, preferably vanilla-flavored
- Add all the ingredients to the blender and puree until smooth.
- Taste, adjust sweetness, if desired and pulse again.
- Transfer to the bowl and serve garnished with unsweetened coconut flakes, more berries, chia seeds or Keto granola.
